data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 ounce cream cheese<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 tablespoon cr\u00e8me fraiche*<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 tablespoon <a href=\"https:\/\/products.wholefoodsmarket.com\/product\/icelandic-provisions-plain-traditional-icelandic-skyr-bf4012\">skyr yogurt<\/a> or full fat Greek yogurt<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">2 tablespoon powdered sugar<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00bc teaspoon <a href=\"https:\/\/www.heilalavanilla.com\/products\/vanilla-extract?variant=31804949495905\">vanilla extract<\/a> <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">2 tablespoons heavy cream <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Pinch of salt<\/p>\n<\/li>\n<\/ul>\n<p class=\"\" style=\"white-space:pre-wrap;\"><strong>Method:<\/strong><\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\"><strong><em>Make the Zucchini Carrot Muffin Batter <\/em><\/strong><\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Melt butter and let it cool.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Add oil, brown sugar, white sugar, maple syrup and honey and whisk vigorously until the is creamy, opaque and homogenous. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Crack one egg into the mixture and whisk until fully combined. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">In a separate bowl, combine all purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg and ground flax seeds.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Pour dry ingredients into the wet mixture and stir everything with your spatula just until no flour pockets remain. Set aside.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Grate your zucchini and carrots on a medium sized grater and fold them directly into the batter. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Line 6 muffin tins with paper liners. Portion out batter between 6 muffin tins. Set aside.<\/p>\n<\/li>\n<\/ol>\n<p class=\"\" style=\"white-space:pre-wrap;\"><strong><em>Make Pecan Oat Topping &amp; Bake Muffins<\/em><\/strong><\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Preheat your oven to 350 degrees. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Grind oats and pecans in your food processor so they are roughly chopped but not fine. Place mixture in a bowl.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Add butter, brown sugar, all purpose flour, baking powder, cinnamon and salt to the oat and pecan mixture. Rub the mixture with your fingers until combined and crumbly.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Crumble this topping mixture evenly over all the muffins.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Sprinkle raw sugar over the muffins evenly. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Let muffins bake for about 18 to 20 minutes or until a toothpick comes clean. <\/p>\n<\/li>\n<\/ol>\n<p class=\"\" style=\"white-space:pre-wrap;\"><strong><em>Make the cr\u00e8me fraiche whipped cream<\/em><\/strong><\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">While the muffins bake, combine cream cheese, cr\u00e8me fraiche, yogurt, powdered sugar, vanilla extract, heavy cream and salt in a medium sized bowl. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Using a whisk, vigorously beat the mixture so it becomes fluffy and light.
