mashed honeynut squash<\/p>\n<\/li>\n<\/ul>\n<p class=\"\" style=\"white-space:pre-wrap;\"><em>Almond Oat Topping:<\/em><\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 tablespoon almond meal<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 tablespoon oats<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 \u00bd teaspoon maple syrup<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 \u00bd teaspoon maple sugar<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 \u00bd teaspoon honey<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u215b teaspoon baking powder<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u215b teaspoon cinnamon<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u215b teaspoon salt<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">2 teaspoons raw sugar<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 tablespoon butter, melted<\/p>\n<\/li>\n<\/ul>\n<p class=\"\" style=\"white-space:pre-wrap;\"><em>Mascarpone Glaze<\/em><\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00bc cup of mascarpone cheese**<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">2 tablespoons <a href=\"https:\/\/runamokmaple.com\/shop\/product\/bourbon-barrel-aged-maple-syrup\/?gclid=Cj0KCQjwk8b7BRCaARIsAARRTL7nac4NEK0SVWk0CMWppyg7VVrUVGZzLltsBfLNRW3SPjKMdO4VYCAaAgdTEALw_wcB\">maple syrup<\/a> (I like Runamok\u2019s Bourbon Maple Syrup!)<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">2 tablespoons honey<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00bd teaspoon vanilla extract <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">splash of bourbon (optional)<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u215b teaspoon salt<\/p>\n<\/li>\n<\/ul>\n<p class=\"\" style=\"white-space:pre-wrap;\"><span style=\"text-decoration:underline\"><strong>Method:<\/strong><\/span><\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\"><strong><em>Make Maple Roasted Honeynut Squash<\/em><\/strong><\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Preheat oven to 425 degrees. Prepare a foil lined baking tray.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Wash your honeynut squash and slice it in half. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Remove fibrous parts and seeds and place on baking tray. No need to peel the skin, its edible and also peels easily.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Drizzle 1 tablespoon of neutral oil all over both pieces of honeynut squash with a brush or your hands. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Drizzle maple syrup evenly on flesh side of the honeynut squash and sprinkle maple sugar. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Bake in a 425 degree oven for about 35 to 40 minutes or until squash is fork tender. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Let it cool. You\u2019ll only need about \u00bc of the whole honeynut squash to make one batch of these muffins. <\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Enjoy the rest plain or use the puree in place of pumpkin  in any recipe.<\/p>\n<\/li>\n<\/ul>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Once cool, scoop out a portion of the honeynut squash and mash with a spoon until nice and smooth. Measure out \u2153 cup and set aside. <\/p>\n<\/li>\n<\/ol>\n<p class=\"\" style=\"white-space:pre-wrap;\"><strong><em>Make Honeynut Squash &amp; Carrot Muffin Batter<\/em><\/strong><\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Grate your carrots and set aside. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Combine oil, maple syrup, maple sugar and honey. Whisk vigorously until the mixture is creamy, opaque and homogenous. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Add mascarpone cheese and vanilla extract and whisk in until fully combined. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Crack one egg into the mixture and whisk until fully combined. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">In a separate bowl, combine all purpose flour, baking soda, baking powder, salt, cinnamon, pumpkin pie spice, almond meal and flax seeds.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Pour dry ingredients into the wet maple\/oil mixture and stir everything with your spatula just until no flour pockets remain.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Fold in mashed honeynut squash and shredded carrots until evenly distributed. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Line 6 muffin tins with paper liners. Portion out batter between 6 muffin tins. Set aside.<\/p>\n<\/li>\n<\/ol>\n<p class=\"\" style=\"white-space:pre-wrap;\"><strong><em>Make Almond Oat Topping &amp; Bake Muffins<\/em><\/strong><\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Preheat your oven to 350 degrees. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Combine almond meal and oats and blitz in food processor until it is fine. Pour to a small bowl. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Add maple syrup, maple sugar, honey, baking powder, cinnamon, salt and melted butter to the oat and almond mixture and mix until combined. Should be a loose paste like consistency. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Drizzle this topping mixture evenly over all the muffins. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Sprinkle raw sugar evenly over muffins as well. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Place muffins on the top rack of your oven. Place an oven proof dish underneath the muffins and fill with an inch or 2 of water. This helps create a sauna like atmosphere which prevents your muffins from drying out. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Let muffins bake for 20 to 25 minutes or until a toothpick comes clean.<strong> <\/strong><\/p>\n<\/li>\n<\/ol>\n<p class=\"\" style=\"white-space:pre-wrap;\"><strong><em>Make the Mascarpone Bourbon Glaze<\/em><\/strong><\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Make the mascarpone bourbon glaze. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">While the muffins bake, combine mascarpone cheese, maple syrup, tablespoons honey, vanilla extract, a splash of bourbon and salt. Stir until smooth and liquidy. Set aside.<\/p>\n<\/li>\n<\/ol>\n<p class=\"\" style=\"white-space:pre-wrap;\"><strong><em>Assembly<\/em><\/strong><\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Let muffins cool for a few minutes and then drizzle half of the glaze all over the muffins. The glaze soaks into the muffin making it super moist.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Once fully cooled, drizzle remaining glaze and enjoy!<\/p>\n<\/li>\n<\/ol>\n<p class=\"\" style=\"white-space:pre-wrap;\"><strong>Notes:<\/strong><\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">*If you do not have maple sugar, feel free to substitute brown sugar, but note the recipe will no longer be refined sugar free.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">**If you can don\u2019t skimp on the mascarpone cheese, it\u2019s so rich and delicious!
