Make a batch of these and freeze some dough for a rainy day when you just need that extra pick me up!<\/p>\n<\/div>\n<\/figcaption><\/figure>\n<\/p><\/div>\n<div class=\"sqs-html-content\">\n<p class=\"\" style=\"white-space:pre-wrap;\"><strong>Salted Brown Sugar Chocolate Chunk Cookies<\/strong><\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\"><em>Recipe adapted from : <\/em><a href=\"https:\/\/www.bonappetit.com\/recipe\/salty-buckwheat-chocolate-chunk-cookies\"><em>Sarah Jampel<\/em><\/a><\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\"><em>Serving: Makes 15-20 cookies depending on size of cookie scoop<\/em><\/p>\n<\/li>\n<\/ul>\n<p class=\"\" style=\"white-space:pre-wrap;\"><span style=\"text-decoration:underline\"><strong>Ingredients:<\/strong><\/span><\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 stick unsalted butter<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 cup + 2 tablespoons of all purpose flour<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">2 tablespoons of bread flour*<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00bd teaspoon baking soda<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00bd teaspoon baking powder<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00be teaspoon salt<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00bd cup white sugar<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u2153 cup dark brown sugar<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u2153 cup light brown sugar<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 teaspoon vanilla paste*<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">2 large eggs<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 egg yolk<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">6 - 8 ounces of good dark chocolate <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Flaky sea salt for finishing<\/p>\n<\/li>\n<\/ul>\n<p class=\"\" style=\"white-space:pre-wrap;\"><span style=\"text-decoration:underline\"><strong>Method:<\/strong><\/span><\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Melt butter on stove top just until it is liquid, set aside and let it cool. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Combine all purpose flour, bread flour, baking soda, baking powder and salt in a clean bowl. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Add white sugar and brown sugars into your pot of melted butter and whisk vigorously until homogeneous. <\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Note: The butter should not separate from the sugars, it should be well combined. <\/p>\n<\/li>\n<\/ul>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Add eggs, egg yolk and vanilla bean paste into the sugar mixture and whisk until nice and smooth. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Fold in the flour mixture into the brown sugar mixture until no more flour pockets are visible. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Chop up your choice of good dark chocolate into bite sized chunks and fold it right into the cookie dough. <\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Note: I like to use <a href=\"https:\/\/www.valrhona-chocolate.com\/valrhona-caraibe-66-baking-bar.html\">Valrhona Caraibe baking bar<\/a>, <a href=\"https:\/\/www.guittard.com\/our-chocolate\/detail\/bake_semisweet-baking-bars\">Guittard 64% baking bar<\/a> or a nice bar of <a href=\"https:\/\/tonyschocolonely.com\/us\/en\/chocoshop\/product\/dark-chocolate-70-6oz35-1-bar\">Tony\u2019s 70% dark chocolate<\/a>.<\/p>\n<\/li>\n<\/ul>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Once the chocolate is combined, refrigerate the dough for at least an hour.<\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Note: This makes it easy to scoop out the dough into balls. <\/p>\n<\/li>\n<\/ul>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Once dough has been refrigerated, scoop dough into balls and place them in your freezer for 12 hours. <\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Note: Now, this step is optional but I highly recommend it! I find that my cookies taste even better after this step!  The freeze time helps meld the flavors and make the cookies nice and chewy.  <\/p>\n<\/li>\n<\/ul>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">When ready to bake, preheat the oven to 375 degrees. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Place a piece of parchment on your baking tray and leave at least 2 inches between between each cookie and the edge of the pan. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Bake the cookies for about 8 to 10 minutes until the cookies are puffy and golden. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">When you pull the cookies out, give the pan a nice bang your counter. They get a nice little crinkly edge. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Scoot your cookies with a cookie cutter or a small round bowl to create a nice smooth edge for any wonky looking cookies. This is a neat little trick I learned from the talented <a href=\"https:\/\/www.cloudykitchen.com\/\">Cloudy Kitchen<\/a>.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Let the cookies cool for about 5 to 6 minutes.
