Set aside. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Whisk the all purpose flour, almond flour, white sugar, salt, baking soda and baking powder in a bowl till combined. Set aside.<\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 \u00be cup of all purpose flour ( 210 grams)<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u2153 cup almond flour (30 grams)<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 \u00be cup white granulated sugar (350 grams)<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 \u00bd teaspoons salt <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00bd teaspoon baking soda<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00bd teaspoon baking powder<\/p>\n<\/li>\n<\/ul>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">In another bowl, add the olive oil, milk, eggs, lemon juice and zest. Whisk vigorously until everything is combined. <\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 cup + 2 tablespoons extra-virgin olive oil (253 grams)<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 \u00bc cup whole milk (300 grams)<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">3 large eggs<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 tablespoon fresh lemon zest (6 grams)<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">2 tablespoons fresh lemon juice (30 grams)<\/p>\n<\/li>\n<\/ul>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Sift in the dry ingredients into the wet and whisk until no more big lumps remain. Do not over whisk. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Pour the batter into the 8 inch pan \u00be of the way. Divide the remaining batter into the lined muffin, you should be able to fill 6 tins \u00be of the way. Place them in the oven for:   <\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Muffins: Bake for 20-22 minutes. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Cake: Bake for 33-35 minutes.  <\/p>\n<\/li>\n<\/ul>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">The cakes should look puffy lightly golden on the edges and should spring back to the touch. A toothpick should come without any wet better when tested. <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Let the cakes and muffins cool for about an hour. (But feel free to eat a hot olive oil muffin because those things are so delicious!) <\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Run a thin spatula or knife to help release the cake from the pan. Peel the parchment and dust the cake with powdered sugar and decorate with desired fruit and garnishes!
